“อาหารผู้สูงอายุ” สำคัญอย่างไร
แต่ละวัยย่อมต้องการสารอาหารที่แตกต่างกันและเผชิญกับการเปลี่ยนแปลงของร่างกายไปตามอายุ โดยเฉพาะผู้สูงอายุ ซึ่งเป็นวัยที่ร่างกายเจริญเติบโตสูงสุดและเกิดความเสื่อมได้มากกว่าวัยอื่น การเลือกอาหารผู้สูงอายุอย่างถูกวิธีเหมาะสมจะช่วยให้ร่างกายได้รับสารอาหารที่ครบถ้วนและชะลอให้ร่างกายไม่ทรุดโทรมก่อนเวลาอันควร
8 วิธีเลือกอาหารผู้สูงอายุให้เหมาะสม
เนื่องจากผู้สูงอายุนั้นมีปัญหาเรื่องสุขภาพไม่เหมือนกันความต้องการสารอาหารจึงแตกต่างกันออกไป เช่น บางท่านต้องการสารอาหารประเภทนี้แต่บางท่านกลับต้องลดสารอาหารประเภทเดียวกันลง วิธีการช่วยเลือกอาหารสำหรับผู้สูงอายุทั้ง 8 วิธีจึงถูกแบ่งออกตามสภาพทางกายภาพ โรคประจำตัว และอาหารทางเลือกอื่นๆ ดังนี้
อาหารสำหรับผู้สูงอายุที่ไม่มีฟัน
ผู้สูงอายุเป็นวัยที่มากไปด้วยโรคภัยไข้เจ็บต่าง ๆ จากความเสื่อมสภาพของร่างกายรวมถึงภาวะการ “ไม่มีฟัน” ซึ่งเกิดจากการสูญเสียฟันไปตามอายุขัย ซึ่งทำให้เกิด “ภาวะขาดสารอาหาร” ตามมาทำให้ท่านเคี้ยวอาหารบางประเภทไม่ได้ กลืนลำบาก และต้องหลีกเลี่ยงอาหารบางประเภทจนทำให้ขาดสารอาหาร ดังนั้นวิธีที่จะช่วยเลือก คือ
1. อาหารนุ่ม-บดละเอียด
อาจจะเป็นเมนูที่ผ่านการประกอบอาหารจนมีรสสัมผัสที่อ่อนนุ่มลงหรือนำมาบดละเอียดเพื่อให้ผู้สูงวัยที่มีปัญหาเรื่องสุขภาพฟันได้ลองรับประทาน เช่น เมนูตุ๋นผักรวม ไข่ตุ๋นทรงเครื่อง เนื้อตุ๋นเปื่อย เป็นต้น เพื่อให้รับประทานง่ายขึ้นนั่นเอง
2. สามารถกลืนได้ง่าย
ในข้อนี้จะเป็นวิธีที่ช่วยเลือกอาหารให้กับผู้สูงอายุที่อาจจะยังมีฟันทานอาหารได้ แต่ก็มีปัญหาในเรื่องของความแข็งแรงเนื่องจากบางรายอาจจะเจ็บหรือปวดฟันในเวลาเคี้ยวส่งผลให้เลือกที่จะกลืนเลยทั้งๆ ที่อาหารยังมีขนาดชิ้นที่ใหญ่อยู่ ดังนั้นลูกๆ หลานๆ จึงควรเลือกเมนูที่สามารถกลืนง่ายไม่ลำบาก เช่น ซุปผักต่างๆ ข้าวหรือโจ๊กหมูสับ เป็นต้น
อาหารสำหรับผู้สูงอายุที่ติดเตียง
เมื่อผู้สูงอายุเจ็บป่วยด้วยโรคเรื้อรัง จนกลายเป็นผู้ป่วยติดเตียง ปัญหาที่สำคัญและพบได้บ่อยของผู้ป่วยติดเตียง คือปัญหาเกี่ยวกับภาวะทุพโภชนาการซึ่งเป็นสภาวะของร่างกายที่ได้รับอาหารไม่เพียงพอกับความต้องการของร่างกาย ได้รับสารอาหารไม่ครบ ทำให้ขาดสารอาหารร่วมกับการขาดพลังงาน ทำให้เกิดโรค เช่น โรคขาดโปรตีน โรคขาดวิตามินต่าง ๆ และภูมิคุ้มกันในร่างกายต่ำ เป็นต้นดังนั้นวิธีที่จะช่วยเลือก
